Counting Calories Isn’t Enough, Experts Say: Focus on How and When You Eat

The conventional wisdom of weight management—balancing calories consumed with calories burned—may oversimplify how our bodies process food. Research now suggests that the type of food we eat, the pace at which we eat it, and even the time of day can significantly influence how many calories our bodies actually absorb.

“This is a huge expanding area of research,” says Sarah Berry, professor of nutrition at King's College London in the UK. “We're really starting to see just how variable our responses are to food – and that I could eat something that I would metabolise in a very different way to how you might metabolise the same food.”

Timing Matters

Nutrition still counts, but what we eat is only part of the equation. The timing of meals can affect digestion and nutrient absorption. One study found that overweight and obese women who consumed most of their calories at breakfast lost more weight than those who ate primarily in the evening, despite consuming the same total calories.

A separate UK study discovered that shortening the eating window—delaying the first meal by 1.5 hours and finishing the last meal 90 minutes earlier—led to lower energy intake and reduced body fat among slightly overweight adults. Scientists believe circadian rhythms may influence metabolism, a growing field known as chrononutrition.

Spanish researchers also found that eating lunch earlier helped participants maintain or lose weight more effectively than those eating after 3 p.m. Evening snacking may be another factor. Eating after 9 p.m. has been linked to higher blood sugar and cholesterol levels, increasing obesity and cardiovascular risk. In the U.S. and the UK, snacks account for roughly a quarter of daily energy intake, highlighting the importance of timing and food choice.

How Fast You Eat

Meal speed also affects calorie absorption. Participants in one study who ate ice cream slowly over 30 minutes released more gut hormones regulating appetite than those who finished in five minutes. GLP-1, a hormone mimicked by weight loss drugs such as semaglutide, rises more effectively during slow eating, helping curb hunger.

Cholecystokinin, responsible for early satiety, peaks in about 15 minutes, while GLP-1 and peptide tyrosine-tyrosine (PYY) reach maximum levels in 30–60 minutes and remain elevated for several hours. Slower eating also improves memory of meals and can reduce subsequent food intake.

“When we eat food, the number of calories we absorb depends on the structure of the food in front of us, as this can determine how easily the nutrients are released,” Berry explains.

Food Structure and Calorie Absorption

How food is prepared and chewed affects the calories absorbed. A handful of almonds contains roughly 160–170 calories, but absorption varies depending on chewing and processing. Whole almonds release fewer calories if not thoroughly chewed, while ground almonds are more fully absorbed. Similarly, pureed apples are eaten faster than whole apples, affecting satiety.

Berry notes that ultra-processed foods often lead to higher calorie intake. “By changing the structure of the food, which changes the texture of the food, it also changes how quickly the food is metabolised, where it's metabolised and where the nutrients are absorbed.”

Microbial Differences

Individual gut microbiomes also influence metabolism. A 2015 study showed wide variation in blood glucose responses to the same foods, such as tomatoes or bananas. Different microbial populations help explain why some people manage weight more easily than others.

Even identical twins can metabolize the same food differently. In a study of over 1,000 twins and unrelated adults, blood sugar, insulin, and lipid responses varied significantly, underscoring potential for personalized nutrition.

Berry emphasizes universal dietary principles: increasing fiber intake while limiting sugar, salt, and fat. She stresses that a varied diet rich in fruits and vegetables supports gut microbiota, which in turn affects how nutrients are metabolized.
